Strawberry "Nice" Cream or Sugar Free Challenge Day 18

Things are going strong with my sugar-free challenge. I am feeling good and I am glad I challenged myself to do this. Yesterday was day 18 and I thought it was about time that I made some kind of dessert for myself that did not include sugar.

Honestly, I am often too lazy to make dessert. I would rather cut up an orange and call it a day. But I thought it would be a good idea to try to have some of these recipes in my arsenal for those times that I NEED something sweet.

Last night we made some strawberry "nice" cream. I made the kids our usual version first with our regular vanilla sweetened soy milk. I am sure this will work just fine with many different variations of both milk and frozen fruit.


I used 1 cup of vanilla soy milk but I am not sure what measurement of frozen strawberries I used. But it made enough for 5 kids and looked something like this:


I think you have to have a stronger blender to do this. I have a Vitamix and I love it. It is about 13 or 14 years old and still going strong. It won't win a beauty contest though. It has staining from years of blending greens and berries and such.

This is what the finished product look like for the kids.   


Next I made a version for myself with "Unsweet" soy milk, frozen strawberries, and a frozen banana. I know the banana in the picture isn't frozen but the one that was frozen looked yucky. So, this one got to be in the picture.



This is what you get. Pretty good. It was too cold outside, seeing it's winter, for this treat. And the kids shivered as they ate it. But it was pretty good.



He looks like he is enjoying it. At one point he did shriek out in pain though. Aww, his first brain freeze.
