Fudgy Black Bean Brownies: Sugar Free Challenge Days 19 - 21

I feel like this challenge has been flying by! It became easier quicker than I expected. As I do this challenge, I notice how my choices are truly impacting and influencing my children. For example, oatmeal is a common breakfast for us, and recently Johnny asked that I no longer put brown sugar in his oatmeal. Granted, he still uses a few chocolate chips, but I can't blame him.

In my effort to find desserts without sugar, I decided to try a recipe for Fudgy Black Bean Brownies. The recipe can be found here if anyone is interested in giving it a try.

I have to say, the kids were less than happy when I told them I was going to make brownies with beans in them. In fact, most of the kids discouraged me from making them. You see, in 2018 I made some Berry Explosion Muffins (you can find the recipe here). It is the first and only time I have ever baked something for my family and had them be mad at me. They hated them that much! Except for Johnny. He and I ate them together.

These are the ingredients the recipe called for. I know my vanilla looks funky. I usually have little helpers that have trouble pouring . . . or wiping things up.



 The recipe is mostly add all the ingredients into the blender and blend. It called for 1 tablespoon of ground chia seeds. Mine were whole so I had my sous-chef Johnny take care of that for me. I could've probably thrown them in the blender whole and hoped the blender did the job - most likely would have been fine but we went with the coffee grinder. By the way my coffee grinder has only been used to grind flax, sesame, and chia seeds so it may give off a coffee flavor if it is actually used for coffee - which could be a good or a bad thing.



A lot of the comments for the recipe said they had a hard time blending and they recommended some water or milk be added. I added a little over a cup of soy milk to the blender before we blended it.




After it all was blended the kids gave the batter a try and boy did their tune change. They couldn't wait to try some. But they had to wait - over 1.5 hours they waited. The recipe says to bake at 200 degrees for 1.5 hours. After that I checked it and it was still very wet. I put it in another 15 minutes and - well, even if it wasn't done - I was!

The verdict? I think it was good. They were not pretty and I think I added too much soy milk and maybe that is why they never seemed cooked all the way. But, all but one of the kids liked it. It was definitely better the next day when it got a chance to cool.

I had a good amount that night and I noticed something interesting. My stomach started to hurt the same as when I have sugar. So, even though I used dates to sweeten it. I have to limit myself even when eating that. I have been having a lot less stomach aches since I gave up sugar so I definitely don't want to go back to that.
